Authentic Central Texas Barbecue featuring the Texas Trinity - Brisket, Ribs, Sausage. Great craft cocktails including our famous Smoked Orange Old Fashioned. Incredibly good desserts like Peach Cobbler and Pecan Pie. Super delicious Breakfast Tacos. It's like taking a trip to Texas the minute you walk in the door.Owner Jack Timmons grew up in Texas and has lived in Seattle for the last 2 decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak and mesquite and started the Seattle Brisket Experience. After a year+ of practicing the art of barbecue, and serving succulent smoked meats to thousands of Northwest BBQ fans at BBQ raves, Jack opened a restaurant in the SoDo region of Seattle in 2014 to bring Central Texas BBQ to the people of Seattle and the Puget Sound region! Tex-Mex cuisine began in the Rio Grande Valley before migrating up to San Antonio during the l860's where a group of women known as The Chili Queens' began to pop up in the city's plazas selling chili con carne with tamales, enchiladas, and chili verde. They incorporated cumin into their dishes favored by settlers from theCanary lslands, which still has a strong influence on Mexican food in Texas. Tex-Mex also loves beef, flour tortillas, yellow cheese, fajitas and more. Our inspiration comes from the many classic Tex-Mex restaurants including Sylvia's Enchilada Kitchen, Papasito's, Ninfa's, Blue Goose, Hugo's, Herrerra's Cafe, Chuy's, Valentina's Tex-Mex and many more. Jackalope combines excellent Central Texas-style smoked meats from Jack's BBQ with delicious Tex-Mex dishes. lt's truly the best of both worlds!

Service and food were good. But I made my reservation a week plus in advance from Mexico and was truly disappointed when they were out of prime rib before 830 pm.

Gyu-Kaku Japanese BBQ in Bellevue is one of our favorite spots, and we find ourselves coming back often. The staff is always attentive and helpful, offering great menu suggestions that make the experience even better. The menu is extensive but not overwhelming, and there's always something new to try. Tonight, we decided to go for the à la carte menu and chose duck, chicken, and the prime kalbi short ribs—each one was delicious. We also ordered a variety of sides, including the spicy addictive cucumber, spicy tuna volcano, Gyu sushi (roast beef), garlic edamame, and Japanese chicken karaage. The chicken karaage here is my kids' favorite compared to other local spots. We also couldn't resist two orders of the cheese corn butter, another top pick, as well as the karage avocado salad and the beef sukiyaki bibimbap. Honestly, the food was so good that we forgot to take pictures, which rarely happens! For drinks, everyone had a Coke, but I opted for the Lychee Berry Fizz, which is my go-to favorite. I also tried the Mango Tango, but it wasn’t quite for me. For dessert, we ordered the Fish Taiyaki with green tea ice cream—an excellent, sweet way to end the meal. The ambiance is casual, with a lively atmosphere that works well for families. It’s a bit loud, which might not be ideal for those looking for a quiet dining experience, but it fits our vibe. If you're in Bellevue and craving Japanese BBQ, this spot is a must!

This was our first visit to Jack's, the service was great, food good, wind pours generous and the beer was cold. It was a fun evening, we enjoyed their steak special. Casual environment, noise was loud but not crazy. Would go again if location was closer to home.
