We opted for the three course lunch menu where you select two options and the chef selects the third. The precision of the cooking is otherworldly. Just one example--the white asparagus with truffle emulsion and piave cheese sprinkled on top was absolutely spectacular. Piave is similar to parmesan but more subtle, and that's the point--the combination with the truffle makes the dish just different enough to elicit a wow! New Haven has some nice spots with excellent food, but Luke is clearly aspiring to an entirely new level.
