They are expertly cooked and when requested served with a final sear on a block of hot Himalayan salt at no extra charge. This is their version of Ruth Chris’ hot sizzling serving platter, and we liked it. Inexplicably the night we dined they were “out” of ribeyes and bone marrow. Nevertheless, we ordered ribeye in a 32 oz. Tomahawk version. This is the in vogue thing where you pay for a huge, attached dinosaur bone that has no meat on it, but the cut is very popular in steakhouses and perhaps connects with our subliminal caveman. It was delicious. The cut includes two sides, we ordered nicely sautéed mushrooms and the Hasselbqck potatoes. The chef has his own version of this and it is worth trying. The restaurant is steakhouse quiet which is a nice change from most Jackson Hole restaurants. Corkage fee is very generous on a national scale, $35/ bottle. One surprise was that despite opening our bottles, the waiter and manager never offered to actually pour the wines. We had to do it.
