How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, located at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

    My first time here at this location. It was for Christmas Eve and I was a little surprised to not see any holiday decorations. I was also surprised by the downstairs when entering.. a simple wood block table , a small bar to the left and a butcher area to the right. Very plain and cold … for the type of restaurant and price I would think it would be more inviting especially when there were multiple people waiting. A few sofas.. decorations, fireplace would have warmed it up. You can take the very tall staircase or elevator to the next floor which also was very plain. Very generic tables and chairs and open area which got very loud. The balcony was beautiful if you can eat out there.. but tonight it was cold and rainy. The service was ok. I know it was a busy night but our waiter wasn’t very attentive and after we ordered our drinks and he brought them he didn’t return for our order for a while. Once he did, we were asking about the meats .. which they are so famous for.. and only then did he offer to bring us the meat tray. Usually that’s part of the ordering process. I had to call over the manager standing around to ask to order. I will say when we got our food it was amazing. We ordered the burnt tips and the fried spinach salad was amazing. Then one of us ordered the short rib/cheese sandwich which was also amazing. Then came the Thomohawk steak for all of us and Mac and cheese. The food was incredible and definitely worth price and wait time. Maybe it’s a cultural or “fancy” thing but it would have been perfect with a warmer Ambience.

    Food well prepared. Temperature of food good & delicious. Noise level too loud. Service overall rushed. No break between courses. Had to ask numerous times for extra bread. Food left on table and no silverware to eat it with. Waiter was friendly & competent. Based on overall experience would not give restaurant a second go.

    It was lovely, a little loud, but otherwise food was really good. They were out of some of the key items I was looking to try, so I will definitely be coming back to try them!

    We had the honor of being served by Juan Carlos and Verónica. Their service was excellent! Juan Carlos made some notable recommendations. The food was prepared perfect. Not only did it look delicious it tasted delicious. I’ll be back.

    They were out of several items. Had a reservation and still had to wait 25 minutes for a table when it wasn’t busy after the lunch hour. Out of ribeye cap, shrimp, and mushroom sauce. Steak was ordered medium rare and came out well done. Had to send back. Second came out medium well. Ate it anyways.

    Disappointing. We were there last about 3 years ago and everything was excellent. This time eggs Benedict seemed like it was pre made. Potatoes pancakes tasted like reheated leftovers. Hollandaise was not freshly made. Our server was nice and helpful with menu. but busy with other tables so good thing I didn't order a bottomless bloody Mary. Only checked on us when someone else brought the food and we hadn't taken a bite yet. Don't think we will be back. I think there is a new manager and things changed for the worse. Too long a drive for risk of a mediocre experience
