How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, located at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

    Everything was great; the food, presentation, and experience. It was affordable if you’re wanting something more elegant but you are not required to dress up. Our server was great. We added a note that we were celebrating us getting married and we received a couple of free items to share. Our only complaint (service) that we were disappointed in was feeling singled out. One of the managers (dressed up in suit and tie) seemed to be greeting tables all around us (some on multiple occasions), but not ours. For lack of better words, every other table looked much different than we did. We decided to call the man over and ask. His excuse was not genuine because we had observed his behavior from the moment we walked in. Overall, the place was nice but there are always room for improvement.

    From the looks of almost all the most recent reviews, it seems that we are not alone. It’s quite obvious that management has zero desire to continue doing the good business that this place did for so many years prior. Everything has gone downhill, but mainly the service and the very unprofessional and poor management. There are so many other places in Vegas to spend $3-400 bucks. Steaks VERY undercooked. Portions are almost nothing now. Waiters don’t pay enough attention to what’s being ordered. About half of our orders were wrong today. And believe me, the way the managers (both) handled things were unfortunately super unprofessional. They make it crystal clear that they do not want any of us to ever eat here again. Sad for the owner that started something great and did amazing for multiple years.

    Was a little disappointed this time last year we came there group of four and we were sat at a amazing table on the main floor with beautiful views, beautiful table, and our waiter was amazing. Told us of all the specials. It was an amazing experience. However, this time we were sat near the kitchen with two tables smashed together. I felt like we were sitting in a cafeteria. It just wasn’t the same ambience as before for that much money it should’ve been more elegant. Our tables had paper lining where last year we had table cloths. We heard no specials. There was no talk about special cuts of meat and it just wasn’t the same like I said for the amount of money we spent, which is fine because the food is amazing. We could’ve had a better table. It was 515 seating and yet we were sat as if it was in the bustle of a busy night and were lucky to get a seat as a walk in kind of disappointed I think next time we’ll go to herbs and Rye.
