At first glance, you might think the name of Rouj Creole is misspelled. Besides “rouj” instead of “roux,” a quick scan of the new restaurant’s menu shows the word “gonbo” where you’d expect to find “gumbo.”But owner Stephen Hightower isn’t a bad speller. He’s just bringing Baton Rouge a taste of Creole cuisine—complete with the authentic Haitian Creole spelling of traditional dishes.
