Entertainment was perfect with the tantalizing steel pan rhythms. I gotta mention the lychee martini which is my go to drink. It was perfectly mixed and unlike some I’ve had was perfectly sweet with the right amount of liquor. The buffet was all that was promised on the excellently curated Independence menu. Golden Apple and ginger juice on point, fish cakes to die for, pudding and pickled SeaCat! I had to get seconds, light dumplings. Chef Fabian outdid himself today. My guests loved the food fare. Service matched the meal too. Alison and Renee took care of my group and went above and beyond to ensure that we had what we needed. The manager was attentive to the guests and checked in often. This added an extra touch to the experience.
