Cardinal is a relaxed fine dining restaurant from chef Tomas Gormley. Located in Edinburghs historic New Town Cardinal offers a modern approach to Scottish cooking. With a wide range of local and sustainable suppliers at our doorstep, from our Lobsters and Crabs at Belhaven Lobsters in Dunbar to our vegetables and Native breed meats at Free Company Farm in Balerno we’re lucky to be taking advantage of Scotlands unique and unrivalled natural larder. Cooking over coals helps add an extra layer of flavour to whatever we’re cooking on them, it’s more intuitive and engaging as cooks and we feel like that comes through on the plate. Tasting menus are our bread and butter but we also offer a pre fixe 'A la carte' menu.

The Cumberland Bar serves Scottish food, real ale, classic wine and spirits in Edinburgh’s New Town. It takes about 15 minutes to reach its location at 1-3 Cumberland Street on foot from Waverley Station. Edinburgh Castle is about a 10 minute drive away from its premises and Edinburgh Playhouse Theatre can be reached within a 10 minute walk.     We booked roof top bar to arrive and be told food would not be served up there due to staffing which wasn't overly a problem for us. We did order drinks and took them up as first time being at cold town house. Outside area beautiful heater if you are cold fantastic view of the castle. While up there a staff member Ben J came up and gave us the wonderful news that we would be able to eat on the roof top. Delighted as it was my birthday. From start to finish Ben made us feel very welcome overall 10 out of 10 for service. He was polite informative attentive and clearly understand how to look after this customers, which made our whole experience. We wanted for nothing it. We will 100% be back and telling friends, food was very tasty menu simple but effective good value for money the chefs know what they are doing every dish on point. Colourful and cooked well. Can't wait eat here again. First time impressions of cold town house food and staff impeccable. I would highly recommend anyone to go.

    Excellent dinner experience in a restaurant that is certainlly on the way to receive a Michelin star anytime soon. The menu is focused on local ingredients and is very crative. The wine pairing had also a couple of nice different surprises and was very well conceived.
