Eight years ago, Maximo Bistrot started as a restaurant for the thinking and execution of dishes from a wide range of techniques with the best of local ingredients; a warmful place that communicated our love for food. After a long and heartwarming road at our current location, we thought for the need of moving. Food is superb, creative and a great mix of Mexican and Nuevo cuisine. The octopus ceviche was world class, the ciliac (sp) soup superb, the cheesecake sublime. The tartan was good. Service—for any restaurant—much less one of thus caliber—a joke. Lunch was almost 2.5 hours because of slow service

The 9-course tasting menu was amazing. Portions were the perfect size and the flavors were fantastic. The staff was extremely attentive and knowledgeable. One of the best dinning experiences I’ve ever had.

The food was great. We really enjoyed the tacos with zuchinni flowers (flor de calabaza) as well as the chamorro. Their cocktails were also creative and delicious. The ambviance included a beautiful view of the Plaza de la Revolucion. We had reservations that were for 5:30pm so we were able to enjoy the view of the plaza at sunset.
