Be prepared to spend around two hours enjoying the full experience. I dined alone and was seated near the air conditioner, which unfortunately left me with neck pain for two days. Overall, my experience was fantastic—a solid 95 out of 100. I could clearly see the creativity, effort, and intricate processes behind each dish. However, I found the balance of protein, carbs, and fat a bit off. The wagyu tartare with mayonnaise didn’t quite make sense to me—wagyu is already rich in fat, and the mayo only added to that. The tiny crisps on top didn’t do much to counterbalance the heaviness. Additionally, the amuse-bouches were fried, and the tartlet also contained mayonnaise, making the overall menu feel a bit too heavy. Adjusting the fat-to-protein ratio could enhance the experience even further. That said, there were several outstanding dishes that I absolutely loved, especially the fish with miso—one of my personal favorites. The sorbets on the menu were also a highlight. I would definitely recommend this place! However we took friends and was a little disappointed. Our friends ordered pork belly and was unavailable, also gluten free soya sauce as she has gluten intolerant was unavailable. The cocktail we ordered was unavailable as no wasabi for it! Also, no Saki wine in which we always have.
