Our menu is inspired by the Mexican regions of Yucatán, Oaxaca, and Veracruz. We strive to respect the influences and traditions of these diverse cultures to bring you food that is uniquely El Jefe. We believe in doing things the right way. Not because it’s trendy or cool, but because it’s right. We change our menu with the grow season, supporting our neighbors and the terroir of Colorado. We are not your average Mexican joint, rather a reflection of our environment and beliefs. We hand make our tortillas every day. All of our pork comes from one whole hog. Our chefs breakdown the whole animal, for chorizo, appetizers, stocks, soups, and entrees. Nothing is wasted. We do this out of respect for the animal and for the people who raised them for us. Anything we can produce in our kitchen is done by us, with love. No frills, just good food. We do an amazing brunch on the weekends, and by default or menu is nearly 100% gluten free.

    Everything we ordered was delicious, this kitchen does not miss. Comfortingly familiar dishes delivered with delightful measures of surprising upscaled flavors. Great food, great wine! But it was our server, Carlos, that made it truly a stand-out experience. He was incredibly personable, gracious and exemplarily poised from start to finish, offering guidance and showing personality when the moment called for it, and giving our large group space (while still ensuring we had what we needed) when our chatter was unbreachable. It was exactly the perfect balance that service in finer dining establishments requires. High praises!

The menu is a masterpiece of creativity, offering dishes that blend familiar comfort with unexpected twists. Each plate is beautifully presented, almost too stunning to eat—but once you do, you’ll be glad you did. The flavors are complex and perfectly balanced, with a focus on fresh, high-quality ingredients. A standout for me was the Seared Hokkaido scallops, saffron paella cakes, smoked roe, bacon glazed squash, celeriac velouté, frisée. The layers of flavor and texture were simply unforgettable. Pair that with a glass from their thoughtfully curated wine list, and you’re in for a treat.     I'm loving the new lamb chop appetizer !!! So many wonderful flavors !! Different from what you'll get anywhere else !! I've had it twice now and my dinner companion had it too and LOVED IT !! As always the service and surroundings were warm and welcoming. I'm so lucky to have this GEM so close.
