Inspired by Ernest Hemingway and named for his beloved boat, Pilar is a neighborhood restaurant that has been a mainstay of 14th street for over a decade. Executive Chef Clarissa Aguilar helms the kitchen turning out an eclectic menu inspired by local farms and New American cuisine with a focus on seasonal organic produce. Located in historic Blagden Alley in D.C.'s Shaw neighborhood since 2015, The Dabney continues to pay tribute to the wonderful farmers, watermen, and purveyors of the mid-Atlantic region whom provide some of the best and most unique products in the country. We celebrate these ingredients by preparing them in a large wood burning hearth which is the centerpiece of our open kitchen.     We dined on the covered and heated patio yesterday and loved our meal. The patio is comfortable to sit on even in the frigid January weather. We even had to ask that the heater next to us be turned down a tiny bit. We ordered the grilled halloumi. The parsley oil drizzle was amazing & the fruit accompaniments were so nice. We then received the Brussels Sprouts. They are so tasty and the portion is very generous. We received the Bronzino, Beef Meatballs, and one of the lamb dishes. We weren’t able to finish everything. I had their signature espresso martini and we shared Lemon Sorbet for dessert. The sorbet was fresh, clean, and delicious. The perfect way to end the meal!

    The service was impeccable; the staff was attentive, knowledgeable, and eager to guide us through the menu. They even shared insights into the cultural significance of some dishes, making the experience feel personal and enriching. Now, onto the star of the show—the food was amazing full of flavor and full of the Peruvian culture and traditional ingredients, the drinks did not disappoint either, was a delightful accompaniment to the meal.

    We had a lovely dinner, but upstairs was very loud. The combo of crowd voices and loud music made it hard to have a conversation. Drinks were great and fries very tasty. Really enjoyed the Brussell sprouts! Service was good and server very friendly, but felt like she was really in the weeds and therefore unable to pay as much attention to us as she would have liked. But others stepped in to help when she was unable to, so your team was working well together.
