From the early days of cattle drives to the continuous family ranches you drive past on your way in, the area is known for its sprawling acreage and the historic trail that the cowboys of the 19thcentury used to help drive the growing economy that was being built by using cattle as the main industry. The Cracker Trail was long and treacherous with heat, swamps and predators along the way, but these cowboys still ventured out every day to ensure the economy we enjoy today is thriving.     Another wonderful evening at The Columbia. They were extremely accommodating when it was impossible for us to find a place to park (perhaps don't go to Celebration at all on holiday evenings). They held our reservation and sat us promptly as soon as we arrived although I must say several disgraceful entitled newcomers were hassling the staff about wait times. They kept their cool much better than I would have. Service was excellent, food was delicious, drinks were well-made. We always leave asking "why don't we come here more often" and we will. We love The Columbia and we loved this Christmas meal.

    Thank goodness it was a lot less salty than our last visits from over a year ago! For years I complained about them using too much salt (as bad for you as sugar). We finally just stopped going when they still oversalted every single dish! This time we tried them again and as usual, I asked for low sodium. The cheese rolls were still salty on top, but the salmon bowl was not....thought they did also put the dressings and condiments on the side for me. I preferred the condiments/dressings on the side to use sparingly. Having high blood pressure is more the norm today so IMO, all restaurants need to be cognizant of the sodium aspect. The waitress was very good and the pace of the meal was too. The food was great and my sp Cod was humongous and tasty! We will be back!
