Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    This was a delightful experience start to finish. The prix-fixe menu had a number of excellent choices. We started with a delicious creamy lobster bisque that was not at all lacking in lobster. We had to request bread, but it was delivered promptly & warm with a delicious butter just tinged with honey & herbs. Between the four of us we tried the Chilean sea bass, the prime rib, the lamb shank & the chicken cordon Bleu. All entrees were delicious & were quite ample portions. The flan for dessert was creamy & sweet. Our waiter, Armando, was amazing! He was attentive without being overbearing, charming and accommodating. He recognized that we were attending a concert, had time constraints and smoothed the way for us. Food, service, ambience…fabulous!

    There were 4 of us…we enjoyed mushrooms, eggplant, black noodles, apple Kimchi salad, a tempura/spicy crab maki roll, crunchy tuna and sea bass. Every dish was well prepared and timely served. Neo (Daniel) our server, was charming, knowledgeable, and very helpful. It was a great dinner celebrated with friends.

    This was our first time here and we had a great dining experience. Our server was attentive and was able to answer all our questions. We had Negroni and Cava with our tapas. We started with two selections, olives and shrimp. Then ordered the grilled artichokes and skirt steak. They were fantastic, we will be returning. Reservations recommended.

    As always, an exemplary dining experience. Delicious appetizers and main dishes: roasted beet salad, mushroom bisque, pork shank, and rack of lamb. Ambience and service were top-notch. Servers were friendly and professional. I have two very minor complaints, and both involve the bread. Geronimo’s used to deliver an impressive bucket of bread with long pieces of lavage oriented vertically, creating an impressive architectural display! Now, it appears they have shifted to more of a standard issue bread basket, which included two types of bread and several pieces of delicious lavash. While eating our main dish, we requested some additional lavash and butter. I expected that we’d get a fresh bowl of lavash and butter. Instead, the server put a couple of pieces of lavash in our existing bread basket and didn’t bring any butter. Not a big deal, but what could have been an absolutely perfect meal was slightly marred by the disappointing bread issues and somewhat stingy refill. Bring back your beautiful bread buckets!!!
