Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

The name Zacatlán surged from the origins of our chef, Eduardo Rodriguez. He was born in Zacatecas, Mexico (north-central Mexico), which is defined as "the habitants of the land where grass grows". Zacatlán is the nahuatl translation for "land with an abundance of grass", and that is where our idea of Zacatlán Restaurant began. Zacatlán Restaurant desires to continue to preserve the traditions for our upcoming generations, while bringing forth new flavors. These new flavors incorporate Southwestern and Mexican influences.     My girlfriends and I ate dinner at Sazon while visiting Santa Fe and were absolutely blown away. The food was delicious and delightfully surprising, and the service was impeccable — we were even greeted by the chef! Our server was very knowledgeable about the dishes and gave wonderful recommendations. If you have the opportunity to dine at Sazon, you MUST try the Sopa De Amor — it has the most interesting and delicious combination of flavors unlike anything I’ve ever tasted before.

    Whenever I come to Santa Fe I dine at the Coyote Cafe. They consistently have a high quality of delicious food and excellent service. Unusual blend of flavors that reveal themselves as you enjoy your meal. Always been one of my favorite places to eat.

    We enjoyed our first visit to Palace Prime. We were eating light, so my husband had the beef carpaccio (he raved about it, very tender and flavorful) and the crab cake (full of crab and browned on the top). I had the risotto special (cacio e pepe with truffle shavings) and a Caesar salad with Spanish anchovies. These also were very tasty and a nice-sized portion. Our server was helpful and attentive but not overly so. We enjoyed the beautiful red and gray interior, a change from the usual Santa Fe style decorating that is common here. Finally, we LOVED that the restaurant was quiet and conducive to conversation, even with a few large groups near us. The fabric-covered ceiling tiles must have helped. This all made for a lovely evening.
