Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    Almost every dish we ordered was great. This is a restaurant we go back to for special occasions and have been doing so for years. We love Japanese food and the sashimi, Spicy tuna on crispy rice were first rate. The Japanese eggplant with miso is another of our favorites. The crab hand roll was ok. We would choose the fried oysters instead. We shared the short rib dish. It was delicious. The vanilla infused fennel and parsnip/pear purée amazing with the richness of the wagyu short ribs. Our dessert of the pear tart with vanilla ice cream was heavenly. And the birthday yuzu creamsicle with a cheese cake like filling was delicious. As always the service and ambiance perfect. A perfect evening of celebration.

    One of the best meals I’ve had in many years. I went with my spouse and two friends for a birthday. We had cocktails, foie gras appetizer, tuna appetizer, pork shank, sea bass, elk tenderloin. Everything was very beautifully presented, carefully crafted, flavors perfectly balanced, and everything perfectly cooked. Service was attentive but not intrusive (perfect!). There was great detail to each dish. For example the tuna appetizer was presented with three different sauces, artistically presented on the plate, I especially remember the wasabi aioli. There were also two kinds of fish roe, marinated, and three different preparations of the tuna. Yes, we all shared each other’s dishes. They were able to accommodate a dairy allergy. Gluten free options were limited, however it was possible. Vegetarian options were available, not vegan. One of my biggest pet peeves about restaurants is when they have an elegant entree, and the extravagantly described dessert is a gussied up sheet cake. That was not the case here. We had gluten free German chocolate cake, banana cream pie, and an apple dessert. Every one was a delicious work of art. For example the apple dessert came, in part, with what looked like a perfect golden apple on the plate. But under the sweet shell (white chocolate?) was a creamy mousse, and apple filling. My spouse said the banana cream pie was the best ever. They were able to substitute the vanilla ice cream side to the chocolate cake with a sorbet without any problem. It wasn’t an inexpensive meal, but one we will remember with fondness for years to come.

    It was a beautiful visit, the only complaint I have is people talking so loud that I can hear every detail of the conversation. I go to relax and enjoy the quiet time, some people are just inconsiderate.

    It is a beautiful restaurant and one we hadn’t visited much in the past. We were given a gift certificate and thought it would be great to re visit the place. There aren’t many vegetarian choices on the menu but the chef prepared a beautiful dish with an array of charred mixed vegetables and a delicious red chile sauce on the side. It was lovely and we enjoyed our visit.

    Food was all good. However I ordered the bison ribs for $43, which should have been called bison rib- singular, because it was a very small plate with the equivalent of one rib. It was good but really guys?!? Everything else was good and reasonable sized portions. Just kind of steamed about paying that much for one rib!
