- AAlbert R.vipDenver / Colorado •11 reviews5.0Dined 1 day agoCypress is a new restaurant opened by a real veteran of Steamboat dining, Collin Kelley. He's done a marvelous job of revamping the former Carl's and the "new" restaurant is really welcoming and comfortable. They have also worked very hard to mitigate the omnipresent noise we find in most other restaurants. We have been twice so far and both times were very pleased with the menu and with the food itself and are especially excited that it leans towards "southern cooking", an unfilled niche here. My advise is to reserve early because this new Kelley production is going to be a winner and late reservations may be very hard to come by.More infoCypressPrice: Expensive• Comfort Food• Steamboat Springs•4.8

- BBruceDenver / Colorado •11 reviews5.0Dined on 6 Dec 2024In all the years we’ve been coming to Steamboat, we’ve never eaten at 8th Street Steakhouse! We really missed the boat on this one. What an awesome fun experience. Great food, great service, awesome rustic environment and no one to blame if your steak/chicken/seafood/hamburger isn’t cooked properly since you can’t follow directions, ie you cook your own entree! Awesome experience! Can’t wait to come back!More info8th Street SteakhousePrice: Moderate• Steak• Steamboat Springs•4.6

Discover Steamboat Springs
After hitting the slopes, no doubt you'll be looking for a restaurant to suit your tastes in Steamboat Springs. Asian, Mexican, and Italian fare can be found in pubs, bistros, and high-end restaurants. If you’re looking for some unique local options, try Rocky Mountain oysters. Despite the name, there is no seafood in this dish. First eaten by ranchers in the Rocky Mountain area, these deep-fried bulls' testicles may seem a little shocking, but they're considered a local delicacy. If you’re looking for something a little easier on the palate while still being true to Colorado's cowboy roots, stop by a restaurant serving buffalo burgers. Buffalo meat is leaner than beef, has a lighter flavor, and is nicely tender.
