Come dine with Michelin Guide awarded Chef Guillaume Robin at the Fabulous Wave Hotel. Influenced by the many flavors of Central and South America, and centered around a dramatic open theater kitchen, BACÁN is elevated yet approachable, innovative, and just a little bit unexpected.

To ensure the most sophisticated experience, we politely request all guests be respectful in their choice of attire while adhering to the following guidelines. For gentlemen we consider tank tops, sleeveless shirts, ripped jeans and flip flops too casual for our restaurant. Ladies are encouraged to wear dresses and skirts, casual dress pants, or jeans (no rips) with a stylish top. All guests should refrain from wearing ball caps, team athletic wear or clothing with offensive language. Any guest denied entry due to our dress code can be accommodated immediately or in the future after adhering to our attire guidelines.

    It was a lovely experience from start to finish. The waiter was very knowledgeable and patient with us while we chose our entrees. We ended up choosing several dishes so that we could share . We also enjoyed an amuse bouche from the chef and a wonderful sweet treat at the end . Truly an amazing experience .

    Went there for our wedding anniversary and I was extremely disappointed. For a "Michelin" rated restaurant the service and the quality of food fell short. Our server was all over the place and all I remembered most of our memorable night is how many times they switched our silverware? My choice of meal tasted horrible (my bad, I guess). The manager was kind enough to offer dessert on the house for the mishap. For the sake of trying to save my sour stomach I ordered dessert. The server brought everyone dessert except for mine, I guess it wasn't my lucky night? Again, I asked for the manager, explained to him the situation and to my surprise he said he has done everything he can do. We always select to treat our gastronomic desires during special occasions, unfortunately, this was nothing but. The place is beautiful and the ambiance is amazing, but that's as far as "the Michelin experience" went.

    Excellent service and food. We celebrated our anniversary and they gave us a glass of champagne and our dessert had happy anniversary on it

    Our experience with Jay and Alexander was superb! All servers and all of your team, especially Cortney, provided excellent service. We wished we could have personally thanked your chef for the excellent chef tasting menu that was prepared.

    I really love this restaurant and the hotel is excellent. We’ve gone there since it opened and even participated in some of their events. For example the James beard foundation event. Which was great and super accommodating for an allergy I have. Unfortunately I am not sure if the chef for Bacan has changed or the quality of food budget has been cut. I am not a complainer but as a restaurateur myself I would want to know. We made a reservation and got there about 20 minutes early. We checked in with the host and went to the bar 5 feet away from her. Waited and nothing , passed our res time 20 minutes are so and I see other tables after us being sat. So I questioned the host, who also went to the people around us and grabbed them for their table, She let me know she texted us but had a problem. We were right in front of her so I dont understand why she didnt come to us if she had an issue. She came and got other tables. Once we finally got sat we had the waiter we had previously and he is amazing at his job. He took good care of us and even tried to make up for the mishap. Just a real gentlemen. Unfortunately the food was not as impressive as it has been in the past and I mean by a lot. Lack of seasoning on everything. The flavors were less than average in most dishes. The only stand out was the carne asada this time but only the rest sadly was just not that great. More than that it just wasn’t the standard we come to know this restaurant for. Which I understand how high the bar is too reach day after day but we as chefs have too challenge ourselves daily. This job is only for those, at this level, that hold themselves to an incredible standard most us would not understand. On special note is to the chef or managers, whoever sold you that boneless lamb rack please from one chef to another never purchase it again. Lamb rack even if it’s cooked med well should still be tender. I ordered med rare, came out mid well but this was not good lamb and very tough.

    Food, wine, and experience was fantastic! Alexander gave a great wine reference. Highly recommend getting a few starters to get the meal off the right way!

    Everything we ordered tasted very good and the only problem was the slow service. Maybe it was our fault because we decided to eat outside in the garden and 95% of what was going on was inside. All I know is that we had to wait a very long time for the waiter to come outside Especially near the end while we were waiting for the check to be picked up. We had to ask another waiter to take it in for us.

    Excellent service, had the Chef’s tasting menu. Delicious and the dessert was to die for!!! It is not cheap but worth it for special occasion

    Servers were amazing ! So personable and attentive. Tasting menu was absolutely extraordinary, not one missed beat ! Location is spectacular and ambiance is incredible ! Looking forward to visiting again ! All in all a singularly spectacular experience!
