    Excelente concepto con comida muy fresca de la chinampas de Xochimilco. También es excelente el concepto que manejan de cero desperdicios. Todo se aprovecha. Muy buena variedad de fermentos y bebidas.

    Amazing service, the staff was very friendly and welcoming. The tomato starter was very interesting, not sure if I’d recommend that. The grassfed pork main was fabulous. Great experience!

    As a cook and restauranteur I found a hidden gem! Fantastic experience! Highly recommended. They have their own fermented beverages. Wait staff was phenomenal specially a male waiter who gave us their tamarind tepache. Food blew my mind! Congrats

    – Mucha pretensión, poco sabor Fui a Baldío con altas expectativas, atraído por su promesa de autenticidad y el uso exclusivo de ingredientes “originales”. Sin embargo, la experiencia terminó siendo más una lección de que la intención no siempre basta. Para empezar, probamos los tomates con miso de masa y reducción de jamaica, una entrada que desde el primer momento causó desconfianza: el miso de masa tenía un olor extraño, casi a podrido, y la combinación de sabores simplemente no funcionaba. Luego llegó la pesca del día, que pasó sin pena ni gloria, sin aportar nada memorable a la experiencia. El plato fuerte fue la tétela de vegetales, que, dentro de todo, fue lo mejor de la noche. Buen equilibrio de sabores y una ejecución correcta, aunque no lo suficiente como para compensar el resto de la cena. En cuanto a los postres, tanto el sándwich de chocolate como la tarta de chocolate con macadamia fueron una decepción. Platos demasiado elaborados en concepto, pero sin el sabor que se esperaría. Un intento de sofisticación que no terminó de cuajar. Las bebidas, aunque bien presentadas, tampoco lograron destacar. Pedimos el Shio Martini y el Pepino Collins, ambos con descripciones interesantes, pero sin el balance ni la ejecución que los hiciera realmente disfrutables. En resumen, Baldío es un restaurante que intenta ser innovador y auténtico, pero se pierde en su propia pretensión. Platos demasiado conceptuales que no logran convencer y bebidas que prometen más de lo que entregan. Al final, la experiencia deja más dudas que ganas de regresar.
