The name "Former Saint" pays homage to the rich history of our location. In 1864, three pioneering Sisters of Loretto journeyed from Santa Fe to Denver to establish St. Mary’s Academy, which operated until 1910. Inspired by this pioneering spirit, our menu celebrates Colorado's adventurous spirit with thoughtfully crafted dishes and a commitment to sustainability. I was excited to dine here, but it absolutely was the worst dining experience from a quality of food standpoint I’ve ever had in Denver. Food was bland, cold, lacked flavor, and was inadequately prepared.

This is a typical hotel restaurant. Food was good, but highly overpriced. Same with cocktails/drinks. Server was very casual, did not explain options well, and struggled to do typical accounting and bills. For the price, there are many other options in the area.

Nicole is super wonderful and friendly. We loved the food, the drinks, the incredible rustic dimmed ambience with wood furniture and beautiful ski paintings; along with the amazing top floor views. A must visit for a tourist as ourselves and locals I’m sure!

You never know about hotel restaurants. This one is quite large, doesn't feel intimate, but is nicely decorated and a pleasant place to be. We visited for lunch on Sunday and had the place basically to ourselves. Since it was empty, it was very quiet, no loud partiers or children. We don't like noisy places, to this was a plus for us and ideal for conversation with our friends. No complaints on the food or the prices, everything was tastefully and well-prepared and arrived at the table hot, another plus. Our waiter, Jorge, was a delight, very attentive, responsive, friendly and fun. He was somehow at our beck and call but disappeared when we wanted to be left alone. Quite positive experience.
