The name "Former Saint" pays homage to the rich history of our location. In 1864, three pioneering Sisters of Loretto journeyed from Santa Fe to Denver to establish St. Mary’s Academy, which operated until 1910. Inspired by this pioneering spirit, our menu celebrates Colorado's adventurous spirit with thoughtfully crafted dishes and a commitment to sustainability. Food was delicious and our server was very sweet. My friend and I were sat in a weird mini L-shaped booth. It might have been fine with my husband, but was weird with my girlfriend.

They seemed busy or short staffed. Had to wait 30 minutes past our reservation time. Food was ok. Service was nonexistent beyond taking order.

The food was so so. The server gave me the wrong drink. We also had to wait to get our bill and it took 2 requests for the server to bring it to the table.

Former Saint was a fun and delicious dining experience. My wife and I each had mushroom bisque to start, and as a longtime mushroom aficionado, I can attest to the excellence of this soup. We had a bottle of Decoy Chardonnay, as my wife is a Chardonnay aficionado, and she attested to its high quality! We opted for a lighter supper than usual, and were thrilled with our choices: my wife’s green salad with tender tasty chicken, and my bison Philly cheesesteak which was terrific! Our server, Scott was perfect: attentive, efficient, and a great conversationalist: he definitely added to the enjoyment of the evening. Set in the back of the Hyatt lobby with a view of the beautiful Colorado Convention Center and the magnificent Blue Bear sculpture, this was a great dining experience!

The waiter was wonderful and was very attentive. Our food was good but nothing exceptional. Also, our steaks, as well as, our sides were barely warm. The butter compound didn't even begin to melt on our steaks, that's how "warm" our food was.

There was only one reservation available, 5:30, which was a little early for our 7:30 Ballet but I tried to get one later but couldn’t. When we got there, the place was empty? Only a few tables full when we left. Way over priced. Cocktails were $16. Entree was $38. A very small sirloin with no sides. We also got a pasta dish - Gnocchi and it was yuck! The only good part was the brussel sprout appetizer. We pay for everything with cash and they wouldn’t accept cash . Don’t they have to accept legal tender? We will not return and we don’t recommend.

We sat in the bar area, the only issue was the couch like seating for the tables does not match the height of the table, making it very difficult to sit and eat and drink

We were pleasantly surprised by our dinner. Much better than the typical hotel lobby all day restaurant experience. Excellent selection of craft beers on tap, and my buffalo ribeye and wife's local lamb t-bone were excellennt and less expensive than downtown Denver restaurant prices.
