A man testes with his brain. I studied it with the book written by Mr.Romela, owner of L'Esguard, and Prof. Toru Fushiki, and it is becoming the core part of my cuisine. The plate like 'sweet', 'hot' and 'sour' is the sense felt by the tongue. However, there is no sense of deliciousness there. We can enjoy deliciousness once when we integrate the taste felt by tongue with brain. We can feel with the brain, in other words, we taste and through the various senses gathered to the brain and sleeping experiences and information.
The power of the new bud out from the snow in early spring and refreshing breeze on a summer day, and curiosity in our childhood...
Not only the sense felt by the tongue but all the surroundings such as the things we can see, smell and feel is the unit of measurement of deliciousness.

    After a previous lunch at Fujiya 1935 about 6 months ago I looked forward big-time to go there again and have dinner. The lunch, which was my first time to the restaurant, was really good so this time my expectations was quite high. This time my expectations wasn't met. The food together with the wine-pairing was very good but I missed the taste-sensations that I experianced the first time I was there.

    さすがにミシュランのレストランです, 食事はシェフのアイディアが感受できました, 食材が食べられることが出来るもとの味, サービスする非常に賢い, 外国人にとても親切です, 全体は満足します。

    毎回期待を裏切らな内容で、アレルギーや偏食にまでも細やかに対応して頂いています。名店なのに敷居が高くなくて インターネットで予約も取りやすくいつも満足です。季節毎に訪問させて頂きたいです。ワサビクリーム、気泡を含ませたパン、はまぐり ブラウンマッシュルームのスパゲティが、特に美味しかったです。 デザートは今回は私にはちょっと甘すぎでした。

    いつも、ナチュラルな雰囲気で、すごく繊細な盛り付けや味わいで 毎回驚かされています。なのに非常にコスパもよくて とてもお薦めです!

    とにかく素材を活かした料理が素晴らしい。 一皿一皿が繊細で、驚きのあるものばかり。 いや、驚きのないものはなかった。 根っこを揚げたものが出てきたときは 「野草!?」と思ったほど。 料理一品一品を批評するのも野暮なので、ここでは概要に留めておくが、 間違いなく美味しい。 これは文字などで表現するよりも、是非一度訪問して 自らの舌で、身体で、五感全てで味わっていただきたい。 そして、料理は本よりスタッフの方々のホスピタリティも素晴らしい。 飲み物のタイミング、勧め方、丁寧でいて親しみがある接客にも舌鼓を打ちたい。 ただ、一つだけ希望を言わせていただくのならば料理のボリュームであろうか。 女性には完食できないくらいのボリュームのように思われる。 難しいかもしれないが、あらかじめ料理の量も伺っていただけると より気持ちよくいただけるように思う。 偉そうに意見を述べたが、総じて不満などなく、満足ばかりが残った。 是非また訪れたい。

    さりげなく店はあった。テッセラタイルの外観から落ち着いた雰囲気が伺える。 中へ入ると、左に水のインスタレーション作品があり、右に集光のダウンライトで照らし出された4つの小さなテーブルが置かれ、そちらに案内される。そこは暖かな間接照明が空間を照らし、何とも不思議な空間である。そこでは料理のご案内と青木良太氏の白磁の器でレモングラスのハーブティーを頂いた。『それではご案内致します。』ここからはご自身でご体験ください。

    The cook showed his passion toward food. The desserts were also great~ creative, balance, delicate! The staff were friendly, and patient ~ especially that we were foreigners and our Japanese were not fluent enough. The only thing we didn't like were the other guests~they were so noisy, talked and laughed so loudly. But anyway, I think it's Kansai style and I can learn to get used to it.
