J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

    We had a wonderful experience at J Carver! This was our 2nd year coming here from out of state for a girls trip and the Austin Half Marathon. Phil was our server and he was incredibly attentive, knowledgeable, charismatic and welcoming . We never were made to feel rushed; instead we felt invited to slow down and enjoy the experience. The food and the service was divine! Thank you, Phil and J Carver staff for being a favorite tradition when we visit Austin!

    J Carver's as usual didn't disappoint. Andrew was a great host and made us fell welcome, he even wished my wife a happy birthday. Nick our server was great and answered all questions that we had. Food was great. Ready to make reservations for next time.

    Great experience overall, amazing food,drinks, ambiance and service. We celebrated our anniversary and they had lovely touches to make our dinner extra special for the occasion. Our reservation was very early (5pm) but the place has thick black curtains that so you still feel like you are having a dinner date even if it is not dark yet outside.

    The service was fantastic. The steak was perfectly cooked. The scallops were delicious. The bananas foster bread pudding is the best desert in town.

    This was our first time to J. Carver's since moving downtown in December and it far-exceeded expectations...it was an awesome experience, amazing food & cocktails, and the ambience was fantastic...we will be regulars!

    Truly loved my experience here. Nice ambience inside and the food was immaculate. J Carver’s made my birthday celebration extra special. I had their Chile Shrimp for appetizer which was one of the highlights with a filet mignon and their chocolate cake!

    It was exceptional. We have our new go to for steak in Austin. And it’s a pleasant surprise when the sides are as amazing as the steak! Excellent dry aged tomahawk ribeye for two, sides, crab cakes and bananas foster bread pudding!!! Pur server Brittany was above and beyond!
