KUMOYA, is a Japanese Kitchen and Sushi Restaurant, the passion project of renowned sushi chef Corey Baker in collaboration with Max Mackissock, located in the heart of LoHi. We specialize in traditional sushi and innovative izakaya-style dishes with a modern Japanese twist. Our kappo-style dining concept allows guests to curate their own culinary adventure. Chefs Corey Baker and Max Mackissock draw inspiration from Kaiseki cuisine, celebrating the seasons and micro-seasons inherent in sushi and Japanese cooking, resulting in a dynamic, ever-evolving menu.

    Wonderful, well be back for sure. They food was unique and delicious. Austin was our server and he was helpful and friendly with recommendations.

    One of the best culinary experiences in Denver. We went with an omakase experience and every single dish that hit our table was extraodinary. The service was delightful, fun, and truly made our night one to remember. I'll be back with more friends soon!

    Food was very tasty throughout. The eggplant was savory and delicious, the dry aged sushi was a treat to try, and we liked the change up of the spicy tuna roll being spicy from wasabi vs sriracha mayo. The service was very energetic and kind but absent from time to time which extended our dining experience. The music, in our opinion, didn’t fit the rest of the atmosphere, thumping more like a club than a high-end Japanese dining destination, although the level of the music was ok, we certainly could hear each other talking. The music was not as pronounced in the front dining room, so if we return we will select the chefs table/bar to avoid it.

    This is the closest you can get to the quality of fish in Japan and the staff are friendly and knowledgeable. Cocktails are excellent as well, with ingredients you won't find everywhere.

    Our experience at Kumoya was exceptional. The staff, including the restaurant manager and the head chef, spoke with us during our meal and were all extremely knowledgeable. The food was incredible and the fish was the freshest I have had in Colorado. We had a selection of appetizers, nigiri, including the emperor fish and blue snapper as recommended by the manager, and a selection of rolls which were so fresh and had very unique flavor. We finished off with several of the desserts, of which the yuzu sorbet was a particular favorite. We will definitely be back!

    This is one of the best Japanese restaurants we’ve been to outside of Tokyo. The sushi was impeccable, and watching the chefs’ knife work was a pleasure. The service was just right. This quality of fish and service is not cheap, but unlike some other places, I think it was worth it.

    Truly five-star, personalized service at the bar and at the restaurant. All the food from the milk bread sandwich, sushi, kara’age, house salad, skewers… everything was delicious. I highly recommend trying the Japanese beer + whiskey pairings.
