James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

    Perle Mesta Our salads came out before the appetizer without apology. They were fine, but no one bothered asking how they were. Our plates were cleared and then our entrees came. Both my steak and my guests sea bass were overcooked and they didn’t bring fresh silverware before the entrees came, so we sat there and stared at our food for about 10 minutes until the SA brought them to our table bare handed. Our server never came back to check on us after the entrees came, so we decided to eat our overcooked steak and fish because at this point we’d been there for over an hour and were starving. Our server never came back to check on us until it was time to offer dessert. We flagged down a manager and described what our experience had been like, but he didn’t seem to really care. He said he’d give us a “nice discount”, which really turned out to be $12 off of our check. $225 for the worst dinner I’ve had in any city as far back as I can remember, and no one seemed to care. A truly forgettable experience. I definitely will not be back.

    Well I really wanted to like this place but after last night that was just not possible. We got seated in the worst table right next to the bar. Our Waiter was consistently slow with our water and drinks. The oysters were small and the Okra well just don't order it. My girlfriend ordered the A5 Waygu and half the cut was fat. To top the night off we ordered chocolate cake to go and they gave us a to go box of someone's pizza. Just massize fails all the way around.

    We had dinner for a birthday tonight, and our server was wonderful! Experience, food, and overall atmosphere was amazing! Thank you for the complementary desserts too!!

    The wait time was a huge issue. It took 30 minutes to get water and 90 minutes to get appetizers. The vegan appetizer came with sour cream ( which wasn't vegan). We saw that the restaurant had two large party's. Clearly under staffed and unprepared. They only had two menus available for our party of four. Which wasn't that big of an issue but again unprepared. We left after appetizers and made reservations at another restaurant Inconsistent with the quality of serves that Andrew Black normally brings. I hope they workout their lack of staffing and vegan options.

    Beautiful place. Perfect lighting and music levels. Nate the server was great. We had seat close to kitchen area and would like a little more light and sound isolation from busy kitchen. The pear salad may be one of best salads I’ve ever had. My only comment about food would be that maybe the limited Christmas menu could have had a couple more selections. The 3 offerings were a bit on the high brow side for me. But all entrees were excellent. A great addition to OKC destination restaurant scene

    We went Christmas Day which was maybe a mistake. My husband’s fish was over cooked and my pork was dry. The sides were good. They were out of Gray Goose and both of the wines we chose. We settled for a less expensive wine. I really had high hopes for this restaurant. The service was good. Maybe an off night for the kitchen.

    This was the one of the worst meals I have ever had. We were there for Christmas Eve. My daughter and I ordered Caviar for our starter. She was told that they were out of caviar spoons. But the waiter was supposed to come back with something. She ended up doing the caviar and its garnishes with her table knife. For the main course, 3 of us ordered the lamb. All of them were grossly overdone. Lamb should be medium rare at most. This was the most well-done piece of meat I've ever had. My daughter and I couldn't cut ours. We requested steak knives and I still couldn't cut mine. My husband had to help me cut mine. The meat was so tough. The waiter removed mine from the bill and he give us 2 free desserts. Also, multiple times, food was brought out and asked if it was ours. It was always another table. The chef is supposed to be a James Beard award winner. I don't know how. He must not be minding the store. We would never go back or recommend it to anyone.
