James Beard-nominated, Chef's Prix Fixe Tasting Experience by Executive Chef Jose Camarena, recontextualizes Mexican cuisine and culture through Storytelling.

We exclusively offer a prix fixe tasting menu experience, with 7-Course and a 10-Course options. Both experiences are meant to honor the complex history that created each dish, as well as leave a lasting impact on all those who taste this beautiful food and listen to our stories.

República is a tasting menu-only restaurant.
We offer a 7-course menu at $128 or a 10-course menu at $150 per person.

We kindly require all guests to disclose all dietary restrictions and allergies prior to their reservation. We are unable to accommodate allergies to nightshades, chile, allium, rice . Additionally we are not a gluten free kitchen and are unable to provide nut and seed free diners.

    Amazing atmosphere. Thoughtful food with immense details about the history and historical context for food. Complex and complimentary dishes that were stunning. Service had great attention to details and service. Highly recommend!

    I booked this to celebrate my 2 year anniversary with my boyfriend. I am not a huge fan of Mexican food but he’s been wanting to go and we’ve loved other prix fixe experiences we’ve done. The restaurant was cute and nicely decorated. The servers were friendly, knowledgeable, and gave a little interesting history for each course. The cocktail menu was phenomenal and the servers were very helpful in choosing a glass of wine. However, the portions were very small, typically 1-2 bites, no more than 4-5 bites per dish. Never have I previously left a tasting menu experience still hungry. We were both underwhelmed by the food. There wasn’t really a standout dish at all and only 2 dishes left us licking our lips wanting more. The main protein dish was also underwhelming and a rather minimal amount of protein. The pacing was a little off and took longer than it needed to given the tiny portions. Lastly, while I appreciate attentive service, the attention to filling the water glasses was laughable. They would come fill it up again after you’d taken just a sip or two. This often interrupted our conversation and was awkward. They did kindly offer a small glass of champagne to each of us for our anniversary, which was very thoughtful. I went in with lower expectations knowing my personal food preferences (I did try everything and ate almost all of everything). He went in with high expectations. We both left disappointed.

    I had been looking forward to dining at Republica for a long time & was unfortunately very disappointed. Dishes were uninspired & surprisingly lacked flavour. Peak of disappointment was the squab. Not something I would choose to eat & ruined a good mole sauce. The quality of the cooking did not justify the price. I hope we went on an off day for the chef & it is normally better.

    From reservation to farewell, this dining experience was exceptional. The staff was incredibly warm and welcoming. The food was exciting and delicious. A perfect place for a special meal :)

    Absolutely excellent! The service was friendly and attentive. The food was delicious and thoughtful. The background and history behind the dishes that the servers gave made it all even more enjoyable! 100% recommend. Must try restaurant if you are a local or visiting and appreciate thoughtful and delicious food.

    The food was out of control great, deeply rooted in Mexican traditions, but showing the chef's playful hand. The staff are very conscientious and took great care of us. My only complaint: the dining room was a touch loud to have easy conversation. 5 stars, will go again.

    It has been 2-3 years since we last ate at Republica, which was at their former location. I’m sorry to say our latest experience didn’t live up to our previous visits. There was only one really “wow” dish (the Uni), and the portions were absurdly small given the prices. We also found it very difficult to hear the wait staff’s explanations of the food - some of them were soft speakers, plus the restaurant was moderately loud and the kitchen staff loudly yell the Mexican equivalent of “heard” whenever the chef issues commands.
