Veritas is a 20-year-old West County restaurant offering our community a relaxed, yet sophisticated place to enjoy innovative food and drink.
Chef / Owner Mathis Stitt’s open kitchen allows everyone to see exactly how he turns fresh, locally sourced provisions into enticing and delicious offerings. While these beautiful compositions are clearly the stars, our entire team takes pride in the relationships developed and nurtured around a Veritas table.
For 8 years, Ian Froebe of the Post Dispatch has published a list of the Top 100 Restaurants in St. Louis - Chef Mathis’ Veritas has been on all of them.

    Join us in welcoming Scott Reed of Round Pond Estate, Rutherford, Napa Valley, for a fantastic 5 course paired dinner composed by Chef Mathis and his team! 6pm, Cost TBD, Limited Seating. Only six square miles, Rutherford is home to some of the most storied wineries in the United States. It has proven ideal for the cultivation of Cabernet Sauvignon, as well as premium Italian and Spanish olives. Using a small selection of extraordinary grapes from their vineyard’s 362 planted acres, Round Pond has established an acclaimed estate wine program focusing on world-class Cabernet Sauvignon produced in limited quantities. They also grow several varieties of olives for the production of premium oils, made on site at their state of the art mill.

    Creative, inventive cuisine in a cool, inviting setting. Intimate and friendly spot with a great wine selection. Executive Chef Mathis changes his menu weekly while his Mom and Dad run the back of the house and manage the wine list with experienced wine veteran Chris Hoskins. The drive to Chesterfield is worth it.

    Always great menu choices! Tried new pot pie and husband had trout. Delicious! Cocktails were excellent and got some eggnog for the holidays Enjoy!

    Pears and Brussels sprouts, fried ribs are outstanding. Never had a bad meal here. Takes a while to get drinks and put in order but doesn’t take away from how great the food is!

    Veritas has a very creative menu and wonderful craft cocktails. It is one of the most innovative restaurants we've found in the STL area. We highly recommend it. Our favorite is the pork shank dish and the wonderful appetizers. Every dish is amazing. Highly recommend.
