Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    Sazón has previously set a high standard, particularly last year when it went above and beyond with exceptional flavors, solidifying its place as the top restaurant of the week. Unfortunately, this year’s experience was a stark contrast, with the food falling noticeably short. Based on our recent visit, Sazón will rank last out of five restaurants we’ve tried, and even The Ranch House surpassed it in terms of food quality—and that says a lot. The Atún Azteca had potential but was overwhelmed by excessive salt, masking the natural richness of the tuna. The Sopa de Amor, while aromatic, contained very little crab meat, leaving it unbalanced and lacking the depth expected from a seafood-based soup. The salmon itself was cooked perfectly, showcasing skillful preparation. However, the huitlacoche sauce drenched over it was overpowering and excessively salty, overshadowing the delicate flavor of the fish rather than complementing it. Perhaps the most disappointing dish of the evening was the Crêpes de Cajeta. A proper crêpe should be light, delicate, and tender, with a slight crispness at the edges. Unfortunately, this version was thick and doughy, lacking the finesse and refinement expected from a dessert of its kind. While the ambiance and service may have met expectations, the food simply did not. Sazón has proven in the past that it is capable of excellence, but this year’s execution was far from it. A more balanced approach to seasoning and a return to the precision that once made it stand out could restore its reputation.

    One if not the best restaurant in Santa Fe for food that combines different flavours and textures to produce amazing food. The service is impeccable and ambience a delight.

    We had heard incredible things from NM locals and resort staff about Sazon. After making our reservations weeks in advance my husband and I were really looking forward to a special dining experience. We opted to go with the restaurant week menu feeling it would be super special. The staff rushed us through the meal from the time we sat down to producing the check. Our entries came cool to warm and were sent back. I had the salmon and it was an elevated hotel banquet meal. To make up for the meal our wait staff brought us an extra desert that was not wanted or something we would ever order. Very disappointing for the hype and cost.

    From the minute we entered Sazón, we were treated exceptionally by the staff, wait staff, bus boys etc. it was the first time that we were not rushed and because of that we had a lovely dinner. The food was stunning and the creativity was bar none. We went due to restaurant week and we now have a wonderful place to come for celebrations and bringing family here. Thank you chef and all for making our first (but certainly not our last) dinner thoroughly enjoyable.

    Order the Poblano soup. Regardless of how many portions they have left - order the Poblano Soup. All of it.

    I had a party of six come to dine for the first time and the only critical feedback to offer was that I did not appreciate the table we were sat at/the location of where we were seated, relative to the kitchen entrance and the natural flow of your staff. We were seated at a large, round table that was basically in the pathway of the service staff, which made one of my guests very uncomfortable having people brisk past them repeatedly and so closely. We attempted to move our table to allow for more personal space for this one guest of mine, and by extension yours, and was told to not move the table to allow for staff to navigate around us. Understandable however it still made no sense as to why that large of a table was positioned where it was. It was oversized for the space and it negatively impacted our first experience with you all, which was quite disappointing and unexpected for such a luxurious night out. My suggestion would be to replace that large table with smaller ones and move the one we were seated at to a section of the restaurant that more appropriately accommodates that.

    Was a little disappointed. Something seemed off. Server was nice but told us our party of 4 had to either order from the restaurant week menu or the regular menu, no mixing which didn’t make sense to us. 3 wanted the regular menu and 1 wanted the restaurant week menu. After the 3rd time asking why, she finally got the ok for us order from either. Service was nice, synchronized service. Drinks were delicious. Food was ok, no one loved their meal or wants to return for another meal.
