Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    The reputation of this restaurant is well justified. The food choices are creative and well prepared. The cholula was excellent as was the sea bass with mole. However, the most notable thing about Sazon after the food is the staff. They are trained in the continental style. Totally attentive, coordinated service and very supportive of each other. Highly recommend Sazon for anyone visiting Santa Fe. I’m sure locals don’t need a review to decide to patronize this restaurant.

    This is our favorite restaurant now in Santa Fe! We went last night for Valentine’s Day, and it was just perfect. The food is outstanding. The staff and chef are so kind, drinks are delicious, and the ambience is low-key. We are very grateful, thank you for giving us a very special evening.

    A must when in Santa Fe! The Sopa de Amor was perfect for our Valentine’s Dinner starter, the mole sampling was itself a gastronomic adventure. Delicious all the way to dessert!

    An Exquisite Experience from Start to Finish From the moment we walked into Sazon, we knew it was going to be a dining experience like no other. And, it was. The ambience is warm, filled with gorgeous artwork (focused on Frieda Kahlo in our area of the front dining room). Our server was personable and professional. We didn't know what to expect and she walked us through the moles, menu and wine list with charm and expertise. We enjoyed having the opportunity to taste all of the moles and then choose the protein/mole match up that suited us: lamb chops and green mole for me; steak and deep chocolatey mole for my husband. Like I said, exquisite! We bookended our meal with their signature dishes: Sopa de Amor (OMG) and Dulce Sinfonía (a dessert I'll be dreaming about for a long time). Sazon hits the trifecta of gorgeous interior, charming and knowledgable servers, and out-of-this-world food.

    Disappointing evening. I think this restaurant is overpriced and overrated. We were seated at a cramped table along the wall, were tricked into drinking $9 bottled water because they never offered tap water or explained that the still water was bottled. The Azteca tuna appetizer was extremely salty - unpleasantly so. The main courses were good - we had the beef tenderloin and shrimp enchiladas. I would not go back again. It was not worth the $200 we spent for dinner - we had 1 cocktail each, shared the appetizer and did not order dessert.
